Ingredients:

Crust and Crumble:

  • 1 1/2 cups almond flour

  • 1 cup rolled oats

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup maple syrup

  • 1/3 cup almond or peanut butter

Filling:

  • 2 cups berries (e.g., 1 cup each of raspberries and strawberries)

  • 1 tbsp lemon juice

  • 2 tbsp maple syrup

  • 1/4 cup chia seeds

Instructions:

  1. Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper.

  2. Heat berries, lemon juice, and maple syrup in a saucepan over medium heat, mashing the berries until they burst. Stir in chia seeds and cool in the fridge for 30 minutes to thicken.

  3. Mix almond flour, oats, baking powder, and salt in a bowl. Add maple syrup and almond or peanut butter, blending well.

  4. Reserve 1/2 cup of the crust mixture, and press the remaining dough into the pan. Pour the thickened berry mixture over the crust.

  5. Crumble the reserved topping over the berries and bake for 35-40 minutes or until golden.

  6. Let cool, cut into bars, and enjoy!
