Ingredients:
2 tbsp ghee (use coconut oil to make this dish vegan)
4 tsp cumin seeds
3 tsp coriander seeds or 1/2-1 tsp ground coriander
2 tsp fenugreek seeds
1 tsp mustard seeds
4 tsp fresh ginger, grated
4 tsp fresh turmeric, grated
2 tsp sea salt
Black pepper, to taste
1 onion, diced (omit if on the Ayurvedic cleanse)
3 cloves garlic (omit if on the Ayurvedic cleanse)
8 cups chopped vegetables (zucchini, carrot, broccoli, spinach, etc.)
1 cup jasmine or basmati rice
2 cups yellow split mung beans (moong dal), rinsed
½ cup cashews
9 cups vegetable broth
1 cup canned coconut milk
Fresh herbs like cilantro or parsley, to garnish
1/2 cup chopped cilantro
Instructions:
Prepare the Rice and Beans: Rinse the rice and mung beans well and set aside.
Sauté Spices: Heat ghee in a large pan. Add cumin, coriander, fenugreek, and mustard seeds, sautéing briefly until fragrant.
Add Aromatics and Veggies: Add ginger, turmeric, salt, and pepper. Stir in the onion, garlic (if using), and vegetables, and sauté until slightly tender.
Cook the Kitchari: Add the rinsed rice, mung beans, cashews, and vegetable broth. Bring to a boil, then reduce heat and simmer covered for 20-25 minutes or until tender.
Finish and Serve: Stir in the coconut milk and adjust seasoning if needed. Garnish with fresh herbs and serve warm.
